Ingredients

  • 4 large ripe bananas
  • 125g unsalted butter
  • 150g light brown sugar
  • 250g self-raising flour
  • 1 tsp baking powder
  • 3 medium eggs
  • 75g soured cream
  • 1 tsp vanilla extract
  • 150g chocolate chips

Method

  1. Heat the oven. Preheat your oven to 180C/160C Fan and line a 2lb loaf tin with parchment paper.
  2. Mash the bananas. Mash the bananas until they reach a soft, mushy consistency.
  3. Cream the butter and sugar. In a separate bowl, combine butter and sugar, beating until smooth and light.
  4. Beat in the wet ingredients. Add eggs, mashed bananas, soured cream, and vanilla. Beat the mixture; don't worry about the appearance at this stage.
  5. Add the flour. Incorporate the flour and baking powder, beating until well combined.
  6. Fold in the chocolate. Gently fold in the chocolate chips and pour the batter into the prepared tin.
  7. Bake the loaf. Bake in the oven for 60-70 minutes. After 30 minutes, cover lightly with foil to prevent excessive browning.
  8. Cool completely. Once baked, allow the banana bread to cool completely before savoring its deliciousness.
