## Ingredients

- 30g plain flour
- 50g caster sugar
- 2 tbsp cocoa powder
- ⅛ tsp bicarbonate of soda
- ⅛ tsp salt
- 3 tbsp milk
- 2 tbsp vegetable oil
- 1 tbsp water
- ¼ tsp vanilla extract

## Method

1. **Mix the dry ingredients.** Mix the flour, sugar, cocoa powder, bicarbonate of soda and salt in a large microwave-safe mug.
2. **Stir in the wet ingredients.** Add the milk, oil, water and vanilla extract and stir until smooth, scraping the bottom and sides of the mug so no dry flour is left behind.
3. **Microwave the cake.** Cook in the microwave until the cake is done in the middle, about 1 minute 45 seconds.

## Notes

- Use a large mug: the batter rises well above where it starts while it cooks.
- Microwaves vary, so check it a little early the first time. It is done when the top looks dry and springs back; a little extra time makes it rubbery rather than more cooked.
- For an even more chocolatey cake, stir a small handful of chocolate chips into the batter before it goes in the microwave. They melt into gooey pockets as it cooks.
- It is best eaten warm, straight away — a scoop of ice cream on top is the obvious addition.
