Makes 3 people · Prep 10 mins · Cook 6 hrs · 9 ingredients · 5 steps

Ingredients

  • 2-3 chicken breasts
  • 6 tbsp soy sauce
  • 1 heaped tbsp minced garlic
  • 2-3 tbsp sweet chilli sauce
  • 4 tbsp honey
  • 1 tbsp cornflour
  • 150ml water
  • 1 green pepper (sliced)
  • 3 nests of noodles

Method

  1. Make the sauce. Stir the cornflour into the water until there are no lumps, then mix it with the soy sauce, garlic, sweet chilli sauce and honey in the slow cooker.
  2. Cook the chicken. Add the chicken breasts, turn them over in the sauce so they are coated, and cook on high for 3 hours 30 minutes or on low for 6 hours.
  3. Add the green pepper. Stir the sliced green pepper into the slow cooker 30 minutes before the end of the cooking time.
  4. Cook the noodles. Near the end, cook the noodles according to the packet instructions and drain them.
  5. Toss and serve. Add the cooked noodles to the slow cooker, mix them through the sauce and chicken, and serve.

Good to know

  • A lower-salt soy sauce keeps six tablespoons from being too salty once the sauce has reduced around the chicken.
  • Jarred or "lazy" minced garlic is what it was written for; three or four fresh cloves, crushed, do the same job.
  • Sliced onion can go in with the pepper, or at the start if you want it soft.
  • The chicken can go in whole and be shredded or sliced in the slow cooker before the noodles are added, or be cut into bite-sized pieces at the start.
  • Sliced spring onions, toasted sesame seeds and a pinch of chilli flakes scattered over each bowl finish it nicely.
