# Strawberry, Watermelon & Mint Refresher

Summer in a tall glass. Frozen strawberries chill it and thicken it, watermelon makes it light and juicy rather than heavy, and a few mint leaves cut through the sweetness so the last mouthful is as refreshing as the first. No sugar, no syrup, nothing but fruit and water — and it takes about a minute from freezer to glass.

## Ingredients

- 100g frozen strawberries
- 100g watermelon _(seedless, cut into chunks)_
- 4 mint leaves
- 125ml water

## Method

1. **Load the blender.** Add the frozen strawberries, watermelon, mint leaves and water to a blender.
2. **Blend until smooth.** Blend until smooth, stopping to scrape down the sides if any fruit is still clinging on.
3. **Serve ice-cold.** Pour into a tall glass and serve straight away, while it is still ice-cold.

## Notes

- Blend the strawberries straight from the freezer — that is what gives it the slushy, ice-cold texture without watering it down.
- Add more water for something you can drink through a straw, or less for a thicker, spoonable version.
- Four mint leaves is a gentle background note; push it to six or eight if you want the mint out in front.
- A squeeze of lime lifts the whole thing, especially if your watermelon is very sweet.
- Freezing the watermelon chunks too makes it thicker still, and works well when you have half a melon to use up.
- Swap the water for coconut water or lemonade for something a little more interesting.
- Blend the mint in for an even green flecking, or muddle it in the glass first if you would rather keep the leaves whole.
- Best made to order — it separates as it stands, so give it a stir if it has been waiting.
