Makes 4 large pancakes (recipe easily scalable) · Prep 15 mins · Cook 15 mins · 4 ingredients · 6 steps
Ingredients
- 100g plain flour
- 2 large eggs
- 300ml milk
- 1 tbsp oil (sunflower or vegetable)
Method
- Whisk the batter. In a large mixing bowl, add all the ingredients and whisk together until you have a smooth batter.
- Rest the batter. Let the batter rest for 10 minutes to allow the flour to absorb the liquid, which will help create fluffy pancakes.
- Heat the pan. Heat a non-stick frying pan over medium heat and lightly grease it with a little oil
- Cook the first side. Pour a ladleful of batter into the pan, tilting it to spread the batter evenly. Cook for 1-2 minutes until bubbles form on the surface and the edges start to look set.
- Flip and finish. Flip the pancake and cook for another 1-2 minutes until golden brown on both sides. Repeat with the remaining batter, adding more oil to the pan as needed.
- Serve warm. Serve the pancakes warm with your favorite toppings, I like caster sugar and lemon juice, but maple syrup, honey, or fresh fruit are also delicious options.
Good to know
- Add a pinch of salt to the batter for enhanced flavor.
