Mango & Passion Fruit Cooler

Two ingredients, one blender, about a minute. Frozen mango does the work of both the fruit and the ice, so it comes out thick, frost-cold and sunshine-yellow without watering itself down, while the passion fruit juice keeps it sharp enough to stay refreshing rather than sweet. The sort of thing to make when it is too warm to think about anything more complicated.

Ingredients

  • 250ml passion fruit juice
  • 150g frozen mango

Method

  1. Load the blender. Tip the frozen mango and the passion fruit juice into a blender.
  2. Blend until smooth. Blend until completely smooth, stopping to scrape down the sides if any mango is still hiding.
  3. Serve it frosty. Pour into a tall glass and drink while it is still frosty.

Good to know

  • No need to defrost the mango — straight from the freezer is what gives it the thick, slushy texture.
  • If your blender struggles, let it stand for 5 minutes or add a splash more juice to get things moving.
  • Add more juice for something you can drink through a straw, or less for a spoonable, sorbet-thick version.
  • Orange, pineapple or mango juice all work in place of the passion fruit juice, though you lose a little of the sharpness.
  • A squeeze of lime brightens it up if your juice is on the sweet side.
  • Frozen pineapple or peach can stand in for some of the mango for a different tropical mix.
  • Blend in a spoonful of yoghurt or a splash of coconut milk to turn it into a creamier smoothie.
  • Best made to order — it separates as it sits, so give it a stir if it has been hanging around.
