Microwave Chocolate Mug Cake

Microwave Chocolate Mug Cake

A chocolate cake for one, mixed and cooked in a mug in the microwave. No eggs or butter, and it's ready in a couple of minutes.

Makes 1 mug · Prep 5 mins · Cook 2 mins · 9 ingredients · 3 steps

Ingredients

  • 30g plain flour
  • 50g caster sugar
  • 2 tbsp cocoa powder
  • ⅛ tsp bicarbonate of soda
  • ⅛ tsp salt
  • 3 tbsp milk
  • 2 tbsp vegetable oil
  • 1 tbsp water
  • ¼ tsp vanilla extract

Method

  1. Mix the dry ingredients. Mix the flour, sugar, cocoa powder, bicarbonate of soda and salt in a large microwave-safe mug.
  2. Stir in the wet ingredients. Add the milk, oil, water and vanilla extract and stir until smooth, scraping the bottom and sides of the mug so no dry flour is left behind.
  3. Microwave the cake. Cook in the microwave until the cake is done in the middle, about 1 minute 45 seconds.

Good to know

  • Use a large mug: the batter rises well above where it starts while it cooks.
  • Microwaves vary, so check it a little early the first time. It is done when the top looks dry and springs back; a little extra time makes it rubbery rather than more cooked.
  • For an even more chocolatey cake, stir a small handful of chocolate chips into the batter before it goes in the microwave. They melt into gooey pockets as it cooks.
  • It is best eaten warm, straight away — a scoop of ice cream on top is the obvious addition.
