Slow Cooker Lasagne Soup

Ingredients
- 1 packet of fresh lasagne sheets (approx 250g)
- 500g beef mince
- 1-2 tbsp tomato puree
- 1 tin chopped tomatoes
- 700g passata
- 1 onion (finely chopped)
- 1 beef stock cube
- 1 tsp rosemary
- 1 tsp oregano
- 1 tsp basil
- Pinch of salt and pepper
- 3 cloves of garlic (finely chopped)
- 1 tbsp Worcestershire sauce
- 400ml vegetable stock
- 50ml double cream
- 50g parmesan (grated)
- 1 ball of mozzarella (tear into small pieces)
- Fresh basil (optional)
Method
- Fill the slow cooker. Combine all the ingredients, excluding the lasagne sheets, parmesan, mozzarella, double cream, and fresh basil (if using) in the slow cooker - stir well.
- Cook it low and slow. Cook on high for 4 hours or low for 7-8 hours.
- Cut the lasagne sheets. Cut the lasagne sheets into strips.
- Finish the soup. Add the remaining ingredients to the slow cooker for an additional 15-20 minutes.
Good to know
- Serve with garlic bread and garnish with a sprinkle of parmesan and fresh basil for a delightful finishing touch.
